The air on the island of Mallorca is too humid to air dry their chorizo, so instead they produce this delicious spreadable version called Sobrasada. it is flavoured with smoked pimenton and has a buttery spreadable texture. Lovely served on crusty bread for a snack.
Makes delicious canapes for a drinks party spread on tiny croutes of bread and topped with a sliced olive.
Serve at room temperature. Not for heating.
