Serrano ham, from the white pig, is served in just about every tapas bar and restaurant in Spain. Many people have a whole serrano ham on a stand at home, especially at Christmas. It has a fine flavour and texture.
Iberico ham comes from the black pig. The best and most expensive comes from pigs that have grazed on a diet of pure acorns. This produces a distinctive flavour and melt in the mouth texture. Served in the finest restaurants all over the worldthis is a ham to be savoured.
The beauty of a whole ham is that there are always those little bits that don't always slice neatly! These can be chopped and added to dishes such as soups and stews to enhance their flavour. Add some to scrambled eggs for a lovely lunch or light supper dish.
